Third Wave Coffee expands playbook with dessert-focused ‘Third Rush’
Third Rush will launch first in Bangalore.
Third Wave Coffee has introduced a new dessert-focused brand called Third Rush, aimed at encouraging spontaneous, casual indulgence rather than reserving desserts for special occasions.
The concept centres on everyday moments—whether unwinding after work, meeting friends late at night, or marking small, unplanned celebrations.
The brand is also positioned to tap into a shift in café culture, particularly amongst younger customers who are increasingly choosing cafés over bars in the evenings.
The menu mixes familiar items with updated formats and newer flavours.
A key focus is tres leches cakes, including a version inspired by Jim Jam biscuits and another incorporating the company’s cold brew coffee.
The lineup also includes layered cakes such as chocolate and pineapple, presented in log-style slices instead of traditional round cakes, alongside options like chocolate pistachio, carrot with cream cheese, and passionfruit vanilla.
Other offerings include layered desserts combining pudding, biscuit crumbs, and flavoured elements, with variations such as banana custard, strawberry hazelnut, and Biscoff.
Some items draw on nostalgic references, including versions inspired by Parle-G biscuits and Bombay cassata.
The range extends to tarts and pies—such as banoffee, lemon, and raspberry pistachio—as well as mousses and cheesecakes, including triple chocolate mousse and Basque cheesecake.
Additional items include warm desserts like skillet cookies and brownies, including a pistachio kunafa variation.
The brand is launching first in Bangalore, with plans to expand to other Third Wave Coffee locations across India.
